Papaya Bread

1/2 cup butter 1 cup sugar
2 cups flour 1 tsp. baking soda
Pinch of salt 1 1/2 tsp. cinnamon
2 eggs 1/2 tsp. nutmeg
1 tbsp. fresh lemon or lime juice
3/4 cup mashed ripe papaya

     In a large bowl cream sugar and butter then add fresh lemon or lime juice mix well; add eggs, mashed ripe papaya and mix well.

     Sift together: 2 cups flour, baking soda, pinch of salt, cinnamon, nutmeg then combine with other ingredients. Pore into a greased flouered bread pan and bake for 1 hour at 350 degrees.

     Topping can be made with 1 unbeaten egg white, 1 1/2 cups powdered sugar and 1 tsp. lemon juice.


Papaya-Banana Nectar

1 cup mashed papaya 1/2 cup sugar
1 cup mashed ripe banana 2/3 cup water
1 cup canned guava juice (unsweetened)
2 tbsp. lemon juice

     Peel the ripe papaya and bananas, cut into pieces and pass through a coarse sieve. Combine all the ingredients and stir until thoroughly blended. Pour over cracked ice until chilled and serve. Makes about 4 cups.

Papaya
